Anyone Successfully Tagging by Email?

have anyone been able to track BY each email conversion and then build out an audience from it? It doesnt seem to match up on my side of things for Google and FB. Meaning that [email protected] did these actions...

1. Click an offer in an email (nutra) - converted
2. 3 days later email sends
3. clicked an offer (ozempic) - didnt convert
4. 1 Day later email sends
5. click an offer (auto insurance) - converted

I am able to track each email and where they convert but audience building seems to be off, I am more interested in the audience vs the vertical audience. Has anyone been able to do such thing?
